Recipe for Green Rice
Green Rice is one of my family's favorite vegetarian recipes. The green is spinach, but sometimes we use chopped broccoli in place of the spinach. Green Rice 3 cups of cooked rice (2 bags if using Success rice) 1 pkg frozen chopped spinach, without sauce - cooked 1/4 cup dried parsley 2 eggs well beaten 3/4 cup milk 1 tsp Worcestershire sauce 1 tsp Morton's Nature Seasoning Blend 8 oz. shredded cheese (Choose from Cheddar, colby and Jack, Mexican blend) (Sometimes we use extra cheese.) Heat oven to 325 degrees. Toss rice, spinach, and parsley together. Stir in eggs, milk, Worcestershire sauce, and seasoning blend. Then stir in about 1/2 to 3/4 of the shredded cheese. Pour mixture into a 10 x 6 x 1-1/2 or 2 quart baking dish. Sprinkle remaining cheese on top. Bake 30 - 40 minutes. It helps to let it sit a few minutes before serving. It easily serves 4 to 5. |
